Always happy to weigh in Charmaine, especially when it comes to bagels. I come from the land of good bagels - Cleveland! Of course, they were $1.25 a dozen when I started my first in the country bagel route in 1970. Hard to beat that too.
To be equitable here you might feature a piece on Grateful Bagel’s operation and history, including their generous hiring of local youth over the years.
i mean i'm not particularly fond of GB's bagels but i am a nostalgic sort and am increasingly saddened by the gentrification of our county and wish we could hold onto the old mainstays somehow. also i buy our bagels for home from The Bagel Mill in Petaluma and have a feeling I'll love BB and likely be a patron. and also ALL THE KIDS in town go to GB, which i love for this town and for GB. hopefully we can have our cake (read bagels) and eat it too.
By the way, traditional East Coast bagels do not 4 days to make and bake. The whole process is usually completed within 24 hours.
Slow rise sourdough bagels can take 4 days, from the time the ferment is started to when the bagels come out of the oven. This isn't traditional -- slow rise sourdough bagels are a fairly recent West Coast innovation.
I'll admit, when walking down Main Street a few months ago, I first saw that a bagel shop was going in, I said out loud, "WTF! Right next to Grateful Bagel???!!!"
After reading this, and being a native East Coaster from Philly & NYC, I'll give it a try. While I like Grateful Bagel, their bagels are not nearly as good as they could be. They've been the only game in town for a long time.
